  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • ½ cup powdered sugar (for rolling)

3. Chill the Dough

6. Cool & Serve

Let the cookies cool in the air fryer for 2–3 minutes before transferring to a wire rack. They’ll firm up as they cool, but stay gorgeously soft inside.
